Vietnamese-Inspired Spring Roll Recipe

Ingredients:

For the Spring Rolls:

  • 8-10 rice paper wrappers
  • 200g RawNoodles
  • 1 cup cooked shrimp, peeled and deveined (optional for a non-vegetarian version)
  • 1 cup fresh lettuce leaves, torn
  • 1 cup bean sprouts
  • 1 medium carrot, julienned
  • 1 cucumber, julienned
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup chopped roasted peanuts (optional, for added crunch)
  • Lime wedges, for serving

For the Dipping Sauce:

  • 1/4 cup hoisin sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon water
  • 1 teaspoon sriracha sauce (adjust to your preferred level of spiciness)
  • 1 clove garlic, minced

Instructions:

  • Prepare the Konjac Noodles:
    • Rinse the konjac noodles thoroughly under cold running water to remove any odor.
    • Boil the noodles according to the package instructions for about 3-4 minutes, then drain and rinse with cold water. Set aside.
  • Prepare the Dipping Sauce:
    • In a small bowl, whisk together the hoisin sauce, peanut butter, soy sauce, water, sriracha sauce, and minced garlic until well combined. Adjust the consistency by adding more water if desired. Set aside.
  • Assemble the Spring Rolls:
    • Fill a large shallow dish with warm water. Immerse one rice paper wrapper at a time into the water for about 10-15 seconds, until it becomes soft and pliable.
    • Carefully transfer the softened rice paper onto a clean and damp surface, such as a cutting board or a damp kitchen towel.
  • Layer the Fillings:
    • In the center of the rice paper wrapper, place a small amount of konjac noodles, followed by a few shrimp (if using), torn lettuce leaves, bean sprouts, julienned carrots, cucumber, mint, cilantro, and chopped peanuts (if desired).
  • Roll the Spring Rolls:
    • Fold the sides of the rice paper over the filling, then gently lift the bottom of the wrapper over the filling, tucking it in tightly.
    • Continue rolling upward until the filling is fully enclosed, creating a tight and neat spring roll.
  • Repeat and Serve:
    • Repeat the process with the remaining ingredients.
    • Serve the Vietnamese-inspired Spring Rolls with the prepared dipping sauce and lime wedges on the side.
