Smoked Salmon Avocado Toast

This recipe takes a playful spin on the classic Avocado Toast! It is not only delicious but also low carb and low calorie, perfect if you are on a diet. Let's dive into this colorful recipe and create the ultimate avo toast. 

Smoke Salmon Avocado Toast

Ingredients:

  • 4 slices of Slimbread
  • 2 ripe avocados
  • 150g of high-quality smoked salmon
  • 1 small red onion, thinly sliced
  • 1 tablespoon capers, drained
  • 1 tablespoon fresh dill, chopped
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Prepare the slimbread according to instructions.
  2. Scoop out the flesh from the ripe avocados and put them into a mixing bowl.
  3. Use a fork to mash the avocados until they turn into a smooth and creamy spread.
  4. Add a squeeze of lemon juice, half of the chopped dill, a pinch of salt, and a dash of black pepper. Mix everything together.
  5. Gently slather the avocado spread onto each Slimbread slice. 
  6. Carefully place the premium smoked salmon on top of the avocado spread. 
  7. Sprinkle wih sliced red onion.
  8. Drizzle a generous amount of extra-virgin olive oil over each toast.
  9. Finish it off with the remaining fresh dill and a dash of black pepper.
