Pumpkin Fettuccine

Ingredients:

Preparation:

  1. Add the Konjac Fettuccine to a pot of boiling water for 3 minutes to heat. Drain, rinse and set aside.
  2. In a large pan over medium heat add the olive oil and garlic and cook for 3 minutes.
  3. Whisk in the tomato paste, pumpkin puree, and oat milk until combined.
  4. Add in the vegetable broth and salt and pepper.
  5. Stir and let cook in low for 7 minutes.
  6. Stir in the pasta until coated.
  7. Serve and enjoy!
