Pumpkin Fettuccine
Prepare this creamy pumpkin fettuccine in just 30 minutes and enjoy one of our favourite fall dinners. This is the perfect diet-friendly dinner with vitamin-packed pumpkin and low-carb noodles.
Pumpkin Fettuccine Recipe: For the best pumpkin pasta in the world
Ingredients:
- 1 package of CleanFoods Konjac Fettuccine
- 1 tbsp olive oil
- 3 cloves of garlic, minced
- 1 can of pumpkin puree
- 2 tbsp oat milk
- 3 tbsp tomato paste
- 1 cup vegetable stock
- Salt and pepper to taste
Preparation:
- Add the Konjac Fettuccine to a pot of boiling water for 3 minutes to heat. Drain, rinse and set aside.
- In a large pan over medium heat add the olive oil and garlic and cook for 3 minutes.
- Whisk in the tomato paste, pumpkin puree, and oat milk until combined.
- Add in the vegetable broth and salt and pepper.
- Stir and let cook in low for 7 minutes.
- Stir in the pasta until coated.
- Serve and enjoy!
