Peanut Butter Energy Balls

  • 1 cup old-fashioned oats
  • 1/2 cup natural peanut butter (or any nut butter of your choice)
  • 1/3 cup honey or maple syrup (adjust to desired sweetness)
  • 1/4 cup ground flaxseed
  • 1/4 cup chia seeds
  • 1/2 cup mini chocolate chips (optional, for added sweetness)
  • SlimJam (any flavor of your choice)

  • Prepare the Peanut Butter Energy Ball Base:
    • In a large mixing bowl, combine the old-fashioned oats, peanut butter, honey or maple syrup, ground flaxseed, chia seeds, and mini chocolate chips (if using). Mix well until all the ingredients are thoroughly combined.
  • Shape the Energy Balls:
    • Take a small portion of the mixture (approximately 1 tablespoon) and flatten it in the palm of your hand.
    • Place a small amount of SlimJam (about 1/2 teaspoon) in the center of the flattened mixture.
  • Form the Energy Balls:
    • Gently wrap the mixture around the SlimJam, forming a ball shape with the filling concealed inside.
    • Roll the ball between your palms to ensure it is well-formed and holds its shape.
  • Repeat and Chill:
    • Continue the process with the remaining mixture and SlimJam until all the energy balls are formed.
    • Place the energy balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
  • Serve and Store:
    • Once chilled and firm, serve these delectable Peanut Butter Energy Balls with a surprise SlimJam filling.
    • Store any leftovers in an airtight container in the refrigerator for up to a week, or freeze for longer shelf life.
