Mango Coconut Rice Pudding

Mango Coconut Rice Pudding

Ingredients:

  • 1 cup jasmine or basmati rice
  • 2 cups water
  • 1 can (14 oz) coconut milk
  • 1 cup unsweetened almond milk (or any milk of your choice)
  • 5 drops SlimSweet (or adjust to taste, as it is much sweeter than sugar)
  • 1 ripe mango, diced
  • 1/4 cup shredded coconut (optional, for garnish)
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • Ground cinnamon or cardamom (optional, for garnish)

Instructions:

  1. Rinse the rice: Place the rice in a fine-mesh strainer and rinse it under cold running water until the water runs clear. This helps remove excess starch.
  2. Cook the rice: In a medium-sized saucepan, combine the rinsed rice and 2 cups of water. Add a pinch of salt. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover with a lid, and let the rice simmer for about 15-20 minutes or until the rice is fully cooked and tender.
  3. Prepare the coconut milk mixture: In a separate saucepan, combine the coconut milk, unsweetened almond milk (or your preferred milk), and SlimSweet. Heat over medium heat, stirring occasionally until the SlimSweet dissolves. Do not let it come to a boil.
  4. Combine rice and coconut milk mixture: Once the rice is cooked, add the coconut milk mixture to the saucepan with the rice. Stir well to combine. Let it simmer over low heat for another 15-20 minutes, stirring occasionally, until the mixture thickens and reaches a creamy consistency.
  5. Add vanilla extract: Stir in the vanilla extract to enhance the flavor of the pudding.
  6. Let it cool: Remove the saucepan from heat and allow the rice pudding to cool to room temperature.
  7. Prepare the mango: Peel and dice the ripe mango into small cubes.
  8. Assemble the pudding: Once the rice pudding has cooled, you can either layer it with diced mango in individual serving dishes or mix the diced mango directly into the rice pudding.
  9. Garnish: If desired, sprinkle shredded coconut, ground cinnamon, or cardamom on top for an extra layer of flavor and presentation.
