Low carb Blueberry Pancakes
Sometimes the only thing you need in life is a delicious low carb breakfast that looks like a party on a plate. These low carb blueberry pancakes are one of the best pancakes we’ve ever had that give you that perfect ‘full’ feeling. What makes this recipe even better is it’s perfect to share or serve at a dinner party.
Ingredients:
- 2 scoops of RawPancake Vegan Classic
- 200 ml of water
- ½ pack (25g) of SlimBread
- Handful of blueberries
- Optional garnish: whipped cream
Blueberry coulis
- 250 g of blueberries
- 150 ml of water
- 20 g of sugar
- 2,5 tbsp cornstarch
Preparation:
- Mix together the water, pancake and bread mix until combined.
- Add the blueberries to the mix and combine it together.
- Add to a pan over medium heat and cook pancakes until batter is all used up.
- In the meantime, prepare the blueberry coulis. Add water, blueberries, sugar and cornstarch in a saucepan on medium heat and slowly bring to boil.
- When pancakes are baked, stack them and top off with whipped cream and the blueberry coulis.
- Serve and enjoy!
