Healthy Vegetarian Lasagna

Made with no meat and low carb noodles, this healthy vegetarian lasagna is the perfect dinner recipe for winter. Healthy Vegetarian Lasagna Recipe

Ingredients:

Preparation:

  1. Preheat the oven to 180 C.
  2. In a bowl mix the ricotta, 2 cups of the mozzarella, 1 cup parmesan, Italian herb blend, and egg until combined. Season with salt and pepper.
  3. Open the CleanFoods konjac lasagna noodles and rinse in a strainer.
  4. Grease a baking dish and add a layer of marinara to the bottom of the dish. Then add a layer of the lasagnas. 
  5. Top this layer with ¾ cup of sauce and ¾ cup of the cheese mixture. Repeat until the pan is full.
  6. End with sauce and top with the remaining mozzarella cheese.
  7. Cover the baking dish with foil and bake for 35 minutes.
  8. Remove the foil and bake for another 15 minutes at 400 F. 
  9. Remove from the oven and let rest for at least 1 hour before serving.
  10. Garnish with basil and serve!
