The holiday season is a crazy time that often involves jumping from holiday party to holiday dinner one after another. As a result, having a few key Christmas recipes ready to bring or serve is a must. However, your Christmas recipes don’t always have to be the same combination of “classic” Christmas foods, you can change it up and bring something unique and different too!

This list of Christmas recipes and how to make them was prepared by Tatum (@growingthroughdirt) and we could not be more obsessed. Check out her account for even more food inspiration!

 

Christmas Appetizer Recipes

Vegan spring rolls

Ingredients:

  • 5 rice sheets for spring rolls
  • 160 grams of Fish Free Tuna
  • CleanFoods Skinny Mayonnaise
  • 1 bell pepper
  • half a cucumber
  • half a red onion
  • pepper and salt

Instructions:

  1. Cut the bell pepper and cucumber into thin strips and the red onion into small pieces. 
  2. Mix the red onion in a small bowl with the Fish Free Tuna, three tablespoons Skinny Mayonnaise and a pinch of pepper and salt.
  3. Very carefully, take a rice sheet out of the package. Place this on a plate and sprinkle with water so that the rice sheet softens and you can roll it.
  4. Make a vertical line on the side of the round rice sheet with the tuna salad. Make sure this filing is no wider than 2 centimeters, otherwise you will not get the rice sheet rolled up. Place the bell pepper and cucumber strips on the tuna salad.
  5. Roll the rice sheet from the side where the tuna salad is. Roll it up tight to the end, you will see that the rice sheet will stick on its own. 
  6. Cut the rice rolls in half, so that you can see the different colors nicely. 

Tip: serve the CleanFoods Skinny Teriyaki sauce as a dipping sauce with these spring rolls.

 

Creamy pumpkin soup with bruschetta

Pumpkin soup recipe

Ingredients: 

  • 1 pumpkin (about 1.5 kg)
  • 2 red onions
  • 2 cloves of garlic
  • 1 stock cube
  • 1 scoop of plain egg white powder (optional)
  • pepper and salt

Instructions:

  1. Prick holes in the pumpkin and put it in the microwave for 4 minutes. This will soften the pumpkin and make it easier to cut. Take a bread knife and cut the pumpkin in half. Remove the seeds and cut it further into small cubes.
  2. Bring the pumpkin cubes to a boil in a pot with 1 liter of water. 
  3. Crush two cloves of garlic with a garlic press, slice two red onions and add to the pot with pumpkin.
  4. When the water has boiled for ten minutes, turn off the heat and carefully scoop the entire contents of the pan into the blender with a large soup spoon.
  5. Let the blender do its work until the soup is an even thickness and no longer contains any pieces.
  6. Pour the contents of the blender back into the pot, add the stock cube and the protein powder, turn the heat back on to a low temperature and keep stirring until the stock cube and the protein powder are completely dissolved.

Bruschetta Recipe 

Ingredients: 

  • Two bags of Slim Bread Garlic
  • half a red onion
  • half a tomato
  • a handful of grated cheese and Italian herbs

Instructions:

  1. Cut the red onion into small pieces and the tomato into cubes. 
  2. Stir the onion, two bags of SlimBread and 100 ml water in a small bowl to a smooth batter. 
  3. Put the mixture in a baking tin and bake for 12 minutes at 180 degrees Celsius in the oven or airfryer.
  4. When the bun is baked, slice it, transfer to a plate and sprinkle with a handful of grated cheese and Italian herbs as desired. 
  5. Add the tomato cubes and put the plate in the microwave for 1 minute so that the cheese melts.

 

Christmas Main Course Recipe 

 

Crêpes with caramelized fruit

Ingredients:

  • 2 scoops of CleanFoods Caramel Pancake mix
  • 5 tablespoons of Greek yogurt
  • ½  an apple
  • 100 grams of pumpkin cubes
  • CleanFoods Salty Caramel syrup and coconut oil.

Instructions:

  1. Mix two scoops of CleanFoods pancake mix with 140 ml of water and mix until combined.
  2. Heat coconut oil in a frying pan and fry the pancakes until golden brown.
  3. Cut the apple into small cubes and fry it together with the pumpkin cubes, in a layer of Salted Caramel syrup until al dente.
  4. Place the pancakes on a plate. 
  5. Garnish the pancakes with the Greek yogurt and the caramelized fruit and finish with a swirl of Salted Caramel syrup.

 

Christmas Dessert Recipes

Panna cotta

Ingredients: 

  • 1 sheet of gelatin
  • 200 grams of low-fat quark
  • two tablespoons of CleanFoods Slim Jam Strawberry
  • fresh fruit and granola

Instructions:

  1. Soak the gelatin sheet in a bowl of water for 5 minutes. 
  2. Squeeze the sheet and heat in a saucepan over low heat with 200 grams of quark. 
  3. Pour the mixture into a container with plastic wrap and let it set in the refrigerator for at least 1 hour. 
  4. Carefully turn the container over on a plate and spread a layer of SlimJam strawberry on top. 
  5. Top with fresh fruit and granola.

 

Blueberry rice porridge

Ingredients: 

  • 20 grams of oatmeal
  • 30 grams of CleanFoods Dry Rice
  • 250 ml coconut milk
  • 100 grams of blueberries
  • Optional: 1 tablespoon coconut protein powder, 1 tablespoon cottage cheese, coconut flakes, some hazelnuts and freeze-dried raspberries.

Instructions:

  1. Bring the oatmeal to a boil with 150 ml coconut milk. 
  2. When the oatmeal has absorbed the milk, add the Dry Rice, blueberries and other coconut milk. If you're also using protein powder, add this now. 
  3. Let the rice pudding simmer on the fire for 5 minutes, while stirring well.
  4. Turn off the heat, pour the oatmeal into a bowl and decorate it with a heart of cottage cheese, coconut flakes, hazelnuts and freeze-dried raspberry

 

Festive cake

Cake Ingredients: 

  • 30 g self-raising flour
  • 2 egg whites from medium eggs
  • half a teaspoon of baking powder
  • 20 g sweetener

Filling ingredients:

  • 70 g plain curd cheese + ¼ teaspoon xanthan gum
  • 70 g vanilla pudding + ¼ teaspoon xanthan gum
  • Two tablespoons of CleanFoods Slim Jam strawberry
  • Toppings: sugar-free powdered sugar and sprinkles to taste

Instructions

  1. Split the egg whites from the yolks, put the egg whites in a large mixing bowl and beat until there are firm, white peaks. 
  2. Carefully fold in the self-raising flour, baking powder and sweetener. It is important not to do this with the hand blender, because then the protein will collapse.
  3. Put the batter in a small round baking pan and bake for 15 minutes at 170 degrees in the airfryer.
  4. When the cake is ready, cut it in half horizontally and get started with the filling.
  5. Mix 70 grams of natural quark with ¼ teaspoon of xanthan gum and spread the bottom layer of cake with this mixture. Add a layer of Slim Jam strawberry on top of the quark. Then mix 70 grams of vanilla pudding with ¼ teaspoon of xanthan gum and place this layer on the jam.
  6. Place the other half of the cake on top of the filling and sprinkle with sugar-free powdered sugar and sprinkles as desired.
