Cheesy Vegan Broccoli Soup

Cheesy Vegan Broccoli Soup Recipe
Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups of vegetable broth
- 4 cups of broccoli
- 1 ½ cups of shredded carrot
- 1 cup of cashews that have soaked for 6 hours
- 1 cup water
- 1 tsp Asian Style Herb Blend
- ½ tsp smoked paprika
- ½ cup nutritional yeast
- ¼ cup plant based milk
- Squeeze of fresh lemon juice
- Salt and pepper to taste
Preparation
- Over medium heat in a medium pan, heat the olive oil and saute the onion.
- Add the garlic and cook.
- Add the vegetable stock, broccoli, and carrots and let simmer on low heat for 15 minutes.
- In a blender add the cashews, water, Asian herb blend, paprika, nutritional yeast, lemon, and plant based milk.Blend until very smooth.
- Add the mixture into the broccoli and stir until smooth.
- Add salt and pepper to taste.
- Add to serving bowls and enjoy!
