Vegan Thai Noodle Salad

Vegan Thai Noodle Salad Recipe

Ingredients:

  • 1 package Raw Noodles
  • 1 cup edamame
  • 2 carrots, cut into long thin strips
  • 1 green bell pepper, finely sliced
  • ½ bunch of cilantro, chopped
  • 1 tbsp jalapeno, finely chopped
  • 2 tbsp sesame seeds
  • Peanut Sauce: 5 thin slices of ginger, 3 cloves of garlic, ½ cup of peanut butter, ⅓ cup honey, ⅓ cup of lime, ½ cup soy sauce, ¼ cup sesame oil, 1 tbsp sriracha sauce, 1 tsp salt

Preparation:

  1. Drain and rinse the Raw Noodles.
  2. Blend all the ingredients for the peanut sauce in a blender until smooth.
  3. In a large bowl toss together the raw noodles, edamame, carrots, bell peppers, cilantro, jalapeno, and sesame seeds.
  4. Pour peanut sauce over top and combine.
  5. Serve and enjoy!
