Vegan Poke Bowl

Gluten-Free and Vegan Poke Bowl Recipe

Ingredients:

  • 1 package of RawRice
  • 100 grams of firm tofu
  • Coconut oil or cooking oil
  • White sesame seeds
  • 1 Tbsp of Almost Skinny Sauce Teriyaki
  • 1  Avocado
  • 1  Mango
  • A handful of Alfalfa Sprouts
  • 1 cup of red paprika
  • 1 wedge of lime
  • Soy Sauce

 

Preparation Method:

  1. Rinse the tofu and cut into 2.5cm cubes or rectangles 
  2. Put tofu into a small bowl and add 1tbsp of Almost SkinnySauce Teriyaki and mix until tofu is covered in the sauce
  3. Add coconut oil to a frying pan on medium heat and add the tofu. Cook for 10 minutes, flipping occasionally while preparing other parts of the bowl
  4. Rinse the RawRice under cold water and add to a pot of boiling water for 2 minutes to heat the rice
  5. Rinse the rice and add ½ to one bowl and the other ½ to a second bowl, creating two servings
  6. Cut the avocado in half and cut into thin slices then add half of an avocado on top of each poke bowl.
  7. Cut the mango in half and cut it into cubes
  8. Add ½ of the mango on each bowl
  9. Thinly slice ½ of the red paprika and add on top of each bowl
  10. Remove the tofu from the heat and add to the poke bowl and sprinkle 1 tsp of white sesame seeds onto the tofu
  11. Take a handful of alfalfa sprouts and place on top of the poke bowl
  12. Slice a wedge of lime and place into the bowl
  13. Serve with chopsticks and soy sauce
