Taco Stuffed Sweet Potatoes
We are bringing you a dinner classic in a whole new way! This recipe takes taco night to a whole new level that is more unique and a lot healthier. Sweet potatoes are full of nutrients and the perfect alternative to taco shells if you still want to enjoy a delicious taco without the extra calories then this is for you.
Taco Stuffed Sweet Potatoes
Ingredients:
- 1 pound lean ground beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 pack taco seasoning
- ½ cup salsa
- 1 tbsp Hot SkinnySauce
- ½ cup water
- 4 sweet potatoes
- Toppings: tomatoes, avocado, sour cream, cheese.
Preparation:
- Cook the ground beef until browned on a stove over medium heat.
- Add in the chopped onion and garlic and heat for 4 minutes.
- Drain the grease from the beef mixture and add the taco seasoning.
- Mix in the salsa and hot sauce.
- Reduce heat to low and cook for 5 minutes until thickened.
- Add up to ½ cup of water to achieve your desired consistency.
- While the meat cooks, poke holes in the sweet potatoes with a fork and cook in the microwave for 10 minutes, turning halfway through.
- Ensure the sweet potatoes are soft enough, if not, cook until they are.
- Cut the sweet potatoes in half and allow to cool for 5 minutes.
- Fluff the inside of the sweet potatoes with a fork and add in the cooked taco meat.
- Top with your desired toppings!
- Serve and enjoy!
