Skinny Strawberry Cheesecake Bars

These strawberry cheesecake bars are one of the best desserts EVER! They don’t require any baking and only take a short amount of time to prepare. Plus, you can cut them into the perfect bite sized portions to control the amount you eat and stick to your diet. Like always we’ve made our recipe as low calorie as possible while still being absolutely delicious. Prepare to fall in love with our favorite bite sized dessert.

Skinny Strawberry Cheesecake Bars

Ingredients:

For the Crust:

For the Filling:

  • 480g nonfat greek yogurt (plain or vanilla)
  • 6oz greek yogurt cream cheese
  • 1 egg white
  • 12g cornstarch
  • 2 scoops Almost Skinny Shake Strawberry
  • 1 tsp vanilla extract
  • 100g fresh strawberries, diced

Preparation:

  1. Preheat the oven to 150C.
  2. Coat an 8 inch square baking pan with non-stick cooking spray.
  3. For the crust: add the cereal to a food processor and blend until fine. Then add to a bowl and stir in the SlimSweet, coconut oil and milk until combined. Add to the baking pan and bake for 15 minutes or until it is dry to the touch. Let cool.
  4. For the filling: beat the cream cheese and yogurt until smooth. Then add the egg white, cornstarch, SkinnyShake and vanilla. Mix in the strawberries.
  5. Add the mixture on top of the crust - adding extra sliced strawberries as a topping - and bake at 150C for 35 minutes until the mixture is set.
  6. Let chill for 8 hours before slicing and serving.
  7. Enjoy!
