Recipe of the week: Vitamin lemon cookies (vegan and gluten-free)

How are you?

Resistance is very important right now! The advice is to keep moving and eat healthy. But did you know that you also get vitamin C with this cookie recipe ?! With one vegan and gluten-free cookie you get 133% of your daily required vitamin C. This way you can enjoy these delicious cookies without feeling guilty.

 


Ingredients:

  • 55 gr coconut oil
  • 1 lemon (organic)
  • 80 gr agave syrup
  • 140 gr almond flour
  • 1 tbsp coconut grater
  • 1 tbsp baking powder
  • 1 scoop of vitamin C powder

 

Preparation method:

  1. Heat the coconut oil au-bain-marie.
  2. Meanwhile, grate and squeeze the lemon.
  3. Mix the melted coconut oil, 2 tbsp lemon juice, 1 tbsp lemon zest and the agave syrup in a bowl.
  4. Add the “dry” ingredients (almond flour, coconut grater, baking powder and vitamin C) and mix well.
  5. Put the mixture in the refrigerator for 30 minutes.
  6. Meanwhile, preheat the oven to about 180 degrees Celsius.
  7. Divide the mixture into 10 biscuits and place on a baking tray lined with baking paper.
  8. Bake the cookies for about 10 minutes and let them cool down.
