Pumpkin Lentil Chickpea Curry

Pumpkin Lentil Chickpea Curry 

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 3 tbsp ginger, grated
  • 75g red curry paste
  • 1 tbsp tomato pasta
  • 2 tomatoes cut into wedges
  • 400g brown lentils
  • 400ml coconut milk
  • 700g butternut pumpkin, cut into chunks
  • 200g spinach
  • 1 package CleanFoods Raw Rice
  • Garnish with: coriander leaves, red chili

Preparation:

  1. Heat oil in a large pan over medium heat.
  2. Add the onions and garlic and cook for 4 minutes.
  3. Add in the ginger, curry paste, tomato, pasta and cook for 2 minutes.
  4. Add in the tomato and cook for 3 minutes.
  5. Add in the lentils and coconut milk.
  6. Add 125 ml of water to the pan.
  7. Let simmer for 8 minutes until the flavours have infused.
  8. Add in the pumpkin and cook for 10 minutes.
  9. Stir in the spinach and cook until wilted.
  10. Rinse the RawRice in a strainer and add to the plate.
  11. Top the rice with the curry.
  12. Garnish with coriander and chili flakes.
