Pumpkin and Sweet Potato Soup

When fall and winter roll around there is nothing better than a warm and comforting bowl of soup. Our delicious pumpkin and sweet potato soup is the perfect fall recipe to warm you up on those chilly days plus it is packed with ingredients that are super good for you. Pumpkin and sweet potato are two vegetables that are packed with nutrients and adding them to your soup is a great way to get a healthy dose of all types of vitamins and other nutrients. 

This pumpkin soup recipe is super easy and quick to make, plus it has a wonderful mix of flavors. It will surely become a fall and winter staple meal due to its irresistible taste and various health benefits. This recipe is suitable for all kinds of diets (vegetarian, plant-based, etc) and can be altered to fit any other diets, for example, removing the sour cream for vegans.  

We have also added a side of our delicious and low-calorie slim bread to the dish. There is nothing better than dipping a piece of warm toast into soup which makes our Slimbread the perfect addition to this meal.

 

Pumpkin & Sweet Potato Soup Recipe

 

Cook time: 20 minutes prep time + 3 or 6 hrs cook time  

Portions:  6 servings

Total calories: 125 kcal per serving

 

Ingredients

  • 1 package Garlic SlimBread
  • 800grams raw pumpkin
  • 400g sweet potato 
  • 3 green onions
  • 500 ml of vegetable stock 
  • 1 tsp smoked paprika
  • 2 tbsp light sour cream 
  • Additional: add salt and pepper for the taste

Instructions

  1. Add pumpkin, sweet potato, onion, vegetable stock, paprika, and 300 ml of water into a cooking pot. Feel free to add more water to get the consistency you desire. 
  2. Cover and let cook on high for 3 hours or on low for 6 hours.
  3. Blend together with a blender until almost smooth
  4. While you cook the soup on low prepare the SlimBread. Pour the bread mix into a mold and pour 50ml water too it.
  5. Bake the SlimBread in the oven at 200 degrees Celcius for 15 minutes.
  6. Serve with a topping of sour cream and a side of slim bread.
