Plant-based diet ?! What is that? (+ recipe)

Dear CleanFoodslovers,

A while ago we were asked to write about the “plant-based diet”. This is the new buzzword alongside flexitarians, pescotarians, vegetarians and vegans. But what does all this actually mean? And isn't a plant-based diet just the same as vegan food?

To be the first to answer; there is a difference between a plant-based diet and veganism.

 

Plant-based diet

People who eat the plant-based diet (almost) do not eat animal products. They eat a lot of vegetables, fruits, grains, legumes, seeds and nuts. This diet is slightly more flexible than the diet of vegans, because they sometimes eat animal products. The focus is mainly on health.

Veganism

Vegans have a slightly different focus. Their focus is mainly on animal suffering. They also think about the environment and their health. In addition to eating no animal products, they also do not use animal products. Think of not wearing a wool sweater or leather shoes. They also look at the ingredients of cosmetics, for example.

 

Every step helps

Maybe you think now, should I leave all my tasty pieces of meat and throw those (new) leather shoes away? No, this is certainly not necessary!

Every step helps, every piece of meat or carton of milk that you replace with a vegetable variant helps with your health, animal suffering and the environment.

You don't have to completely switch to a full plant-based diet or veganism (of course you can). For example, you can choose to eat vegetarian or vegan for one day or meal. To help you, we've made a recipe for you with our vegan RawNoodles.

 


Vegan RawNoodles with broccoli and cashew nuts (4 persons)

Ingredients:

  • 500 gr broccoli
  • 200 gr mushrooms
  • 0.5 red pepper
  • possibly (coconut) oil
  • 200 gr unsalted cashew nuts
  • vegan “chicken pieces”
  • 15 g fresh mint
  • 2 packs of RawNoodles
  • 2 tbsp soy sauce

 


Preparation method:

  1. Cut the broccoli into small florets and the stem into small pieces.
  2. Cook this for about 5 minutes.
  3. Meanwhile, cut the mushrooms into slices and the red pepper.
  4. If necessary, fry the cashew nuts in some (coconut) oil and store them separately.
  5. In the same pan, fry the vegetables and the vegan “chicken pieces” for about 5 minutes with a
  6. splash of water.
  7. Rinse the RawNoodles under the cold tap in a colander.
  8. Add the RawNoodles, soy sauce and broccoli to the pan and cook for 3-5 minutes.
  9. Meanwhile, chop the mint.
  10. Serve the RawNoodles with the cashew nuts and the chopped mint.
  11. Enjoy your meal!
