Low calorie carrot cake

Incredibly delicious and secretly healthy, this low calorie carrot cake is exactly what you need to curb your sweet tooth without ruining your diet. Everyone loves carrot cake, especially during fall. Many people are deceived into thinking all carrot cakes are healthy, but they are often full of fats and sugars. But not ours! Enjoy our low calorie, low fat carrot cake today.

Ingredients:

  • 150 g Almost SkinnyShake cookies & cream
  • 100 g self-raising flour
  • 100 ml sunflower oil
  • 100 g dark brown sugar
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 eggs (medium)
  • 50 ml orange juice (1 orange)
  • 250 g carrots

 

Frosting

  • 100 g unsalted butter (room temperature)
  • 200 g cream cheese
  • 150 g powdered sugar
  • 50 ml orange juice (1 orange)

 

Toppings:

  • Carrots
  • pecans

 

Preparation:

  1. Preheat the oven to 180C.
  2. Mix the eggs, sunflower oil, sugar and vanilla extract together.
  3. Add the Almost SkinnyShake, self-raising flour, carrots, cinnamon, baking soda and baking powder to wet ingredients and mix until everything is combined.
  4. Add the orange juice to the mixture and mix until combined.
  5. Pour the mixture in a mold and put in the preheated oven. Bake the cake for 50 minutes.
  6. When the cake is ready, check whether it is cooked. Otherwise it needs to stay a little longer in the oven. Do not make the frosting until the cake has cooled down. 
  7. When the cake is ready, it’s time to make the frosting. Add the butter, cream cheese and powdered sugar in a bowl and mix until smooth.
  8. Add the orange juice to the bowl mix until everything is combined.
  9. Pour the frosting over the cake and decorate with carrots and pecans.
  10. Serve and enjoy!
