Healthy Kale Salad Recipe with Ginger Apricot Dressing

Healthy Kale Salad Recipe

Dressing Ingredients:

  • 3 tbsp SlimJam Apricot
  • 1 cm fresh ginger, grated
  • ⅓ cup orange juice
  • Pinch of salt and pepper
  • 2 tbsp apple cider vinegar
  • ¼ cup olive oil

Ingredients for Salad:

  • 5 cups of chopped kale
  • 1 tbsp olive oil
  • ½ cup sliced almonds
  • 1 cup chickpeas
  • ¼ cup diced red onion

Preparation:

  1. Make the dressing by combining the ingredients in a mason jar and shaking until combined.
  2. Massage your kale with a little olive oil until the leaves darken.
  3. In a large bowl add all the salad ingredients and combine.
  4. Top with dressing and mix fully.
  5. Enjoy!
