EASY Vegetarian Fried Rice

Easy Vegetarian Fried Rice

Ingredients:

  • 3 tbsp olive oil
  • 1 cup chopped carrots
  • 1 cup shredded cabbage
  • 1 cup dried zucchini
  • ½ cup thinly sliced pepper
  • 1 cup frozen edamame
  • 3 large eggs
  • Salt and pepper to taste
  • 1 package RawRice
  • ¼ cup soy sauce

Preparation:

  1. Cut the veggies.
  2. Add to a pan over medium heat with 1 tbsp olive oil. Cook for 4 minutes. Transfer to a plate and set aside.
  3. Beat the eggs and mix with salt and pepper. Heat 1 tsp of olive oil in the same medium pan and cook the eggs.
  4. Drain and rinse the rawrice.
  5. Add rice, eggs and veggies back into the pan for 5 minutes. Stirring occasionally.
  6. Pour on the soy sauce and season with salt and pepper.
  7. Serve and enjoy!
