Brown Butter Salted Snickerdoodle

There is no better quick and easy dessert than a cookie. A timeless classic we have all come to know and LOVE. However, sometimes making the same recipe time and time again can get boring. That is why we want to introduce you to your new favorite cookie recipe: Brown Butter Salted Snickerdoodle. Made with sweet and rich brown butter and a surprise caramel on the inside, this is the perfect fall cookie to get you through the colder days.

Brown Butter Salted Snickerdoodle

Ingredients:

  • 2 ½ cups of all purpose flour
  • 1 tsp baking soda
  • 2 tsp cream of tartar
  • 1 tsp cinnamon
  • ½ tsp sea salt
  • 1 cup unsalted butter, cut into pieces
  • 1 ¼ cup brown sugar
  • ¼ cup granulated sugar
  • 3 drops slim sweet
  • 1 egg yolk and 1 egg
  • 1 tsp vanilla extract
  • 18 caramels, cut into halves
  • 1 tbsp plain greek yogurt
  • Toppings: CleanFoods salted Caramel Sauce

Preparation:

  1. Using a medium sized bowl whisk together the flour, cream of tartar, baking soda and sea salt. 
  2. Brown the butter by heating a thick skillet over medium heat. Then adding the butter and whisking constantly. Cook until all the butter has melted. The butter will begin to foam with brown specks on the bottom of the pan, when this happens remove from heat and cool to room temperature.
  3. Combine with a mixer the brown butter, sugars, and slimsweet, until blended. Then add in the egg and egg yolk, plus the vanilla and greek yogurt. 
  4. Add the dry ingredients into the mixing bowl with the wet ingredients until just combined.
  5. Make the dough into a ball and cover with plastic wrap so it can chill in the fridge for 30 minutes minimum.
  6. Preheat the oven to 350 F.
  7. Using 2 tbsp of dough per cookie, roll the dough into balls and flatten.
  8. Place a piece of caramel in the center of the dough and then wrap the dough round the caramel into a ball ensuring it's completely covered.
  9. Place the dough on a backing sheet ensuring the cookies are 1.5 inches apart.
  10. Bake for 9-10 minutes until the edges are golden.
  11. Allow the cookies to cool.
  12. Top with CleanFoods Salted Caramel Sauce.
  13. Serve and enjoy!
