Before Summer Dinner

Dear CleanFoodslovers,

It is almost summer! We are so looking forward to this! What do you think of on a lovely summer day? We think of eating delicious fresh salads in the open air and having a picnic with family and friends in a park.

To get you in this summer mood, we have made this ideal Before Summer Dinner. This dinner contains simple recipes that are suitable to prepare, so that you will not be in the kitchen for a long time on the day itself. Cook, eat and enjoy with your family and / or friends!

 


The Before Summer Dinner consists of 3 courses for 4 people, which you can find below!

Starter: Bruchetta di aglio

Main course: Risotto di mama

Dessert: SlimCake Vanilla Deluxe

Starter: Bruschetta di aglio

You can easily make this recipe a few hours in advance. Make sure that the rolls do not get moist, so that the bruschetta remains crispy. You can make the dip less spicy by adding no / less pepper.

 


Ingredients:

  • 3 bags of SlimBread Garlic
  • 150 ml of water
  • 1 tomato
  • 1 pepper
  • 1 onion
  • 15 g fresh parsley
  • 4 cloves of garlic
  • 2 tbsp olive oil
  • half lemon
  • 2 tbsp pepper flakes
  • 1 tsp black pepper
  • possibly rosemary

 


Preparation method:

  1. Preheat the oven to 180 degrees Celsius.
  2. In a bowl, mix the SlimBread Garlic with the water and spread it over the baking tins.
  3. Bake the loaves in the oven for 15 minutes.
  4. Meanwhile, chop the tomato, pepper, onion and parsley and put it in a bowl.
  5. Press the garlic and add it to the mixture together with the olive oil.
  6. Squeeze the lemon, add it to the mixture and stir well.
  7. Finally add the pepper flakes and black pepper.
  8. Chop 2/3 of the mixture in a food processor.
  9. Remove the bread from the oven, cut into slices and grill on a grill.
  10. Serve the bread with this spicy tomato dip.

Main course: Risotto di mama

You can prepare the risotto in advance and reheat it. You can also serve a delicious salad with the risotto.

 


Ingredients:

  • 2 onions
  • 3 cloves of garlic
  • olive oil for baking
  • 300 gr chicken fillet
  • pepper to taste
  • 2 courgettes
  • 3 large carrots
  • 250 gr chestnut mushrooms
  • 400 ml vegetable stock
  • 2 packs of Clean Foods Dry Konjac Rice (75gr)

 


Preparation method:

  1. Peel the onions and chop them into small pieces together with the garlic. Heat some olive oil in a frying pan and fry the onion and garlic.
  2. Cut the raw chicken fillet into small cubes, season with pepper and fry them in the pan.
  3. Meanwhile, cut the zucchini into cubes, the mushrooms into slices and grate the carrots. When the chicken is almost done, add the vegetables to the pan.
  4. Pour the stock into the pan and bring to a boil. Rinse the konjac rice under the cold tap in a colander, add this and let it simmer for 5 minutes.
  5. Turn off the heat and season the risotto with salt and pepper.

Dessert: SlimCake Vanilla Deluxe

If you want to prepare this recipe in advance, you can prepare the filling in advance, just like cutting the fruit (for decoration).

 


Ingredients:

  • 2 sachets of SlimCake Vanilla
  • 100 ml of water
  • 100 gr red fruit
  • 100 gr low-fat cottage cheese
  • pistachios as a topping

 


Preparation method:

  1. In a bowl, mix the SlimCake with the water until there are no lumps in the mixture.
  2. Divide the mixture between 4 (silicone) molds and put this in the microwave for 1 minute at 900 Watt.
  3. Let the SlimCake cool down.
  4. Meanwhile mash 40 gr of fruit in a small bowl.
  5. Mix the fruit with the curd cheese.
  6. Divide the cottage cheese mixture over the cooled SlimCakes and serve with the remaining fruit and pistachios.
