Vegetables Pinzimonio and SkinnySauce Curry

It is always good to start your well-deserved lunch or dinner with a good dose of fibre and vegetables, this will help you stay fit and acquire many of the vitamins you need to get through the day. As always, we at Cleanfoods are always looking for new recipes and we really like to refresh them and make them our own. For this reason today we offer you this classic Seasonal Vegetable Pinzimonio with a sauce prepared with our Skinnysauce Curry, to spice up and try something new that will leave you pleasantly surprised.

Pinzimonio is a preparation that includes oil, salt and pepper, and optionally you can add vinegar to the taste, for this version we decided to wander and explore a different taste, curry goes well with raw vegetables and to have the correct addition of macronutrients we added a handful of mixed nuts. Ingredients:

  • 70 g Carrots
  • 70 g Celery
  • 120 g Bell Pepper
  • 100 g Broccoli
  • 1 head of “Roman” Salad
  • 1 Endive
  • 1 Pear
  • 70 g mixed Nuts

Pinzimonio:

  • 15 ml Olio evo
  • 5 ml Apple Vinegar
  • 30 ml SkinnySauce Curry

 

Preparation:

  1. Clean and cut the vegetables, making sure they are bite-size
  2. In a bowl, quickly mix the ingredients for the pinzimonio
  3. Arrange the vegetables on the plate and add the ready pinzimonio to the center of it
  4. Enjoy this excellent appetizer all year round!
