Easter Cake Recipe

Good morning CleanFoodslovers,

It's almost Easter! Celebrate this with your family by making this delicious Easter cake together! We believe that you can eat a piece of cake with a special occasion! The nice thing about this recipe is that you can adjust it to your wishes. For example, you can make this cake healthier by adding more fruit or replacing (part of) the sugar! Decorate this cake with your favorite topping such as fruit, nuts and delicious bars of Almost SkinnyChoco from us!

 

Ingredients:

  • 150 gr Almost SkinnyChoco White
  • 200 gr butter
  • 3 eggs
  • 150 g caster sugar *
  • grated zest of an orange
  • 200 gr (gluten-free) self-raising flour
  • 200 grams of strawberries
  • 0.5 orange juice orange
  • 150 gr whipped cream (light)
  • 75 gr cream cheese (light)
  • topping (we used fruit, pistachios and chocolate (eggs) for this)

* You can choose to replace (part of) the sugar with a sugar substitute such as SlimSweet

 

Method of preparation :

  1. Preheat the oven to 200 degrees Celsius.
  2. Grease 2 springform tins (20 cm).
  3. Melt the chocolate and butter au-bain-marie.
  4. Meanwhile beat the eggs in a bowl for 2 minutes into a fluffy batter.
  5. Add the sugar and grated zest. Mix for 2 minutes.
  6. Add the flour to the mixture and mix for 4 minutes.
  7. Divide this light mixture between the 2 springform tins and bake in the oven for about 20 minutes.
  8. Squeeze half the orange and slice the strawberries.
  9. Remove the cakes from the oven, let them cool and spread the orange juice over the cakes with a brush.
  10. Meanwhile, beat the cream until stiff and mix with the cream cheese.
  11. Divide half of the cream cheese mixture over the first cooled cake layer and place the strawberry slices on top.
  12. Place the 2nd cake layer on top and spread the other half of the cream cheese mixture on top.
  13. Decorate the cake with the topping.
