3 Amazing Potato Salad Recipes

Classic Potato Salad Recipe

Ingredients:

  • 800g baby potatoes
  • 3 shallots, finely chopped
  • 3 tbsp AlmostSkinny Sauce Mayo
  • 3 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • Handful of parsley leaves, chopped

Preparation:

  1. Boil the potatoes for 20 minutes until just cooked, then drain and let cool. 
  2. Cut the potatoes into quarters and add them to a large bowl.
  3. Add in the shallots, mayo, olive oil, vinegar and mix together.
  4. Stir in the parsley and serve!

Bacon and Blue Cheese Potato Salad

Ingredients:

  • 800g baby potatoes
  • 100g smoked bacon
  • 4 spring onions, sliced
  • 4tbsp sour cream
  • 50 g blue cheese

Preparation:

  1. Boil the potatoes for 20 minutes until just cooked, then drain and let cool. 
  2. Fry the bacon until crispy and golden and let cool.
  3. Add the spring onions, sour cream, and blue cheese to a bowl and mix fully.
  4. Cut the potatoes into quarters and add them into the bowl along with the bacon.
  5. Mix and serve!

Herb Vinaigrette Potato Salad

Ingredients: 

  • 800g baby potatoes
  • 4 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 1 clove of garlic, crushed
  • 1 tsp dijon mustard
  • Italian Style Herb Blend

Preparation:

  1. Boil the potatoes for 20 minutes until just cooked, then drain and let cool. 
  2. Whisk together the olive oil, red wine vinegar, garlic and mustard.
  3. Add Italian style herb blend.
  4. Cut the potatoes into quarters and add them into the bowl.
